It all begins at Bouvet's hundred and twenty special chattels, where each tiny berry of grape is cared for like a dazzling diamond.
Every step of the journey is under the expert supervision of Bouvet's trained oenologists. Together they carry out the pressing, which is subject to a strict quality control. The first fermentation takes place in state-of-the-art, self-regulated and temperature controlled stainless steel vats. This eradicates temperature fluctuations, which could be harmful to the product at this stage. Then they journey into Bouvet-Ladubay's 1000 year old venerated cellars built into the tuffeau or freestone that makes up the sanctuary of Bouvet. Here as time rolls, the wine deepens and matures naturally. Finally the second fermentation takes place in the 'methode traditionnelle', in 5 miles of tunnels, under the attentive care of the riddlers.
